MENU DESIGN I create specialized meal programs for individuals that want to improve their health, have strict dietary restrictions due to poor health, physical or emotional issues or individuals who just want to feel better. Athletes that need high calories, people who are sick and need to take in a lot of calories but have no appetite, people with autism that have a high degree of sensitivities, diabetics that need low sugar and low fat diets, picky eaters, for anyone that has dietary restrictions. I listen to my clients needs, likes and dislikes and then go about creating menus that are fun, surprising and delicious. My goal is to help people have a seamless transition to a healthier version of their existing diet.
FOOD PRODUCT DEVELOPMENT Starting with an initial concept and limitations. working out details, presenting options, narrowing these options and then, in a test kitchen, creating a unique dish and recipe to go with it, specifically designed for a client.
BURGERS Vegans can have delicious burgers but they don’t have to be made from meat. I have developed several recipes using ingredients like mushrooms, quinoa, beets, sorghum, buckwheat, rice. I can make a burger out of any ingredient. The idea is to create a “similar” experience to a meat patty. Its not going to be the same because its not made from the same ingredients but the experience will be similar with out all the negative health impacts that come from eating a meat patty.
SAUCES I consider sauces one of the most important ingredient in a meal. The right sauce can transform the simplest meal into the greatest culinary experience of your life. No joke, ts true. Sauces are also a place where you can add calories for people with low appetites and they are easy to eat and digest. Sauces can make your least favorite food taste delicious, I am deeply passionate about making sauces, I believe that they are one of the keys in helping people enjoy some foods they might not like but have to eat.
FLAT BREADS Making flat breads from scratch is a great way to add crunch or texture to meals. They are easy to make with only four ingredients: flour, water, salt and oil. You can make tortillas from any flour.
VACUUM SEALED MEALS Vacuum sealing food is one of the best ways to preserve it. It protects it from air, one of the three elements that degrade food. By storing it in the freezer it is also protected from heat and light the other two elements that deteriorate food. Not all food does well vacuum sealed because it sucks all the air out of the bags, it can destroy delicate textures. Pastas, rice beans and grains along with soups and sauces in general do great. They are also very easy to heat up and bring back to file in minutes
